Salmon Piccata:

Ingredients:
- 2 salmon fillets 
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh parsley
- Lemon slices for garnish

Instructions:
1. In a shallow dish, combine the all-purpose flour, salt, and black pepper.
2. Dredge each salmon fillet in the flour mixture, shaking off any excess.
3. Heat the olive oil in a large skillet over medium-high heat.
4. Place the salmon fillets in the skillet and cook for about 4-5 minutes on each side, or until they are cooked through and nicely browned. Remove the salmon from the skillet and set aside.
5. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
6. Pour in the chicken broth and lemon juice, scraping the bottom of the skillet to release any browned bits.
7. Stir in the capers and let the sauce simmer for about 2-3 minutes, allowing it to reduce slightly.
8. Return the salmon fillets to the skillet and cook for an additional 1-2 minutes, spooning the sauce over the fish.
9. Remove from heat and sprinkle with chopped fresh parsley.
10. Garnish with lemon slices and serve the salmon piccata with your choice of sides, such as steamed vegetables or mashed potatoes.
