Pan-Seared Cod in White Wine Basil Sauce with Tomatoes, Lemon Juice, and Zest:

Ingredients:
- 2 cod loins (6 oz each)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup white wine
- 1/2 cup chicken or vegetable broth
- 1/4 cup heavy cream
- 1/4 cup chopped fresh basil
- 1 cup cherry tomatoes, halved
- Juice and zest of 1 lemon
- Lemon wedges for serving

Instructions:
1. Season the cod fillets with salt and pepper on both sides.
2. Heat the olive oil in a large skillet over medium-high heat.
3. Place the cod fillets in the skillet and cook for about 4-5 minutes on each side, or until they are cooked through and nicely browned. Remove the cod from the skillet and set aside.

8. Return the cod fillets to the skillet, spooning the sauce over them.
9. Cover the skillet and let the fish sit in the sauce for a minute or two to absorb the flavors.
