Blackened swordfish recipe

Blackened Swordfish Steak:

Ingredients:
- 2 swordfish steaks (6-8 oz each)
- 2 tablespoons paprika
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons butter
- Lemon wedges for serving

Instructions:
1. In a small bowl, combine the paprika, dried thyme, dried oregano, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to create the blackened spice rub.
2. Pat dry the swordfish steaks with a paper towel to remove any excess moisture.
3. Rub the blackened spice mixture evenly onto both sides of the swordfish steaks, pressing gently to ensure it adheres well.
4. Heat a large skillet over medium-high heat and add the butter.
5. Once the butter has melted and starts to sizzle, carefully place the swordfish steaks in the skillet.
6. Cook the swordfish for about 3-4 minutes on each side, or until the fish is cooked through and nicely blackened.
7. Remove the swordfish steaks from the skillet and let them rest for a few minutes.
8. Serve the blackened swordfish steaks with lemon wedges on the side for squeezing over the fish.
